Jalapeno Chicken Bites

Ingredients:
3 Chicken Breasts cut into ½ inch chunks
8 fresh jalapenos cut in half length wise then cut into ½ inch slices width wise (be sure to wear gloves when handling the jalapenos.  If you refuse to get gloves or don’t have any, wash your hands VERY thoroughly before touching your face or anyone else. )
1 lb. bacon cut in half (can substitute turkey bacon)
Salt & pepper to taste
Instructions:
Preheat oven to 375 degrees.  Soak 10 wooden skewers in hot water for 30 minutes.   Sprinkle chicken with salt and pepper to taste.  Place chicken chunk inside a jalapeno slice then wrap them in a half strip of bacon.  Thread onto the skewer.  (Approximately 5 pieces per skewer)  Repeat with remainder of chicken. Bake for approximately 40 minutes. Flip the skewers and bake about 20 minutes more.

Spicy Chicken Buffalo Dip

Serves  12

Ingredients:
8 oz. (one package) cream cheese, room temperature
½ Cup chunky blue cheese dressing (can substitute Ranch dressing)
½ Cup Frank’s Red Hot Sauce
½ Cup shredded mozzarella cheese
½ Cup shredded  2% cheddar cheese
24oz. shredded chicken (canned or shredded rotisserie)

Instructions:
Preheat oven to 350 degrees.  Lightly coat a baking dish with nonstick cooking spray and set aside.  Place room temperature cream cheese in a bowl and whip until smooth.  Mix in salad dressing, hot sauce, and cheese until well blended.  Stir in shredded chicken and mix until well incorporated.  Pour into baking dish or pie pan and bake for 20 minutes.  Serve with celery sticks.
