Crockpot Pork Chalupas
4 lb. pork shoulder roast
3 (4 oz) cans chopped green chilies
1 can fat-free beef broth
1 1/2 tbsp. chili powder
1 1/2 tbsp. ground cumin
1 1/2 tbsp. dried oregano
1 1/2 tbsp. garlic powder
Place roast in Crockpot coated with cooking spray. In a small bowl, mix 2 cans of the green chilies and all seasonings. Pour the seasoned mixture over the roast and add the can of beef broth so the roast is mostly covered. Jiggle the roast to get some liquid beneath it. Cover and cook on low 8-9 hours. When roast is fork-tender, remove and shred, trimming as much fat as possible. Return meat to Crockpot and add the third can of green chilies. Heat through before serving. Serve alone or over cauliflower rice.
